Lemony Overnight Honey Chia Pudding

Intro

The perfect solution to get those extra few minutes of sleep in the mornings and still be able to enjoy a delicious
and nourishing breakfast! Creamy, thick chia pudding that is so easy to make. Just a few ingredients required for
this tasty breakfast, snack, or even dessert!

Ingredients
2 cups plain Greek yoghurt (or another yoghurt of your choice)
1⁄4 cup Bee Bodhi Virgin honey
2 tablespoons lemon juice
2 teaspoon grated lemon zest
2 tablespoons chia seeds
1 teaspoon vanilla extract
2 cup defrosted mixed berries (fresh berries are also an option when it’s in season)
1 handful of chopped raw almonds
1 small handful of finely chopped fresh mint leaves

Directions

- In a small bowl, combine Greek yoghurt, honey, lemon juice, lemon zest, chia seeds and vanilla extract. Using
a whisk, stir to combine and until it is a smooth consistency. Feel free to add a little bit of water if you prefer a
thinner consistency.
- Cover and refrigerate the chia seed mixture overnight, or at least 3-5 hours for it to become a pudding-like
texture. It may be helpful to go back and give the mix another stirs after about 30-40 minutes of refrigeration.
This will help prevent the chia seeds from clumping on the top.
- Layer half of the chia seed mixture into 4 small glasses. Top with half of the defrosted mixed berries. Repeat
the layers. Finish with chopped almonds and fresh mint leaves.
