Our Bee Bread Honey comes from the Swedish coastal meadows and is harvested at the very end of the season, when summer turns into autumn. This flavoursome raw honey is mainly composed of the nectar of heather trees that grow in the wild. Its jelly-like texture comes from the gentle process of pressing it, making it possible to get the most out of the nectar. Because of that, it is also richer in nutrients. These extra nutrients give the raw honey numerous health benefits.
This raw honey can be stored for as long as you want and can also be warmed gently, just like our Virgin Honey. Its sweet-bitter tones make it very enjoyable on its own and, apart from the regular use, our customers often use it as a glaze on barbecue chicken. Its malty, woody-spicy honey flavour definitely adds some extra bite to any dish.
Raw honey does not contain any additives and is 100% pure honey. Which is why it sometimes starts to crystalize at cold temperatures. This is not a sign of poor quality! As a matter of fact it's the opposite.
It is highly recommended to store the bee bread honey in the refrigerator after opening as it might start to ferment in the summer at warmer temperatures. Fermentation of the honey does not mean it has gone bad, only the taste might change.
